A blended cuvée: 80% Aubun and 20% Carignan and Aramon, from vines planted on limestone soils in the Carcassonne commune in South-West of France. Yields: 25 hl/ha. Vinification: grapes are sorted bunch by bunch in the cellar, the least ripe are pressed directly and the rest macerate in the juice for 25 days, partially destemmed by hand; bottled by gravity at the right moon, aged on laths for 24 months. A disgorged cuvée, but unfiltered, unfined, without added sulfur.
