“Cochon de Dieu” is the favourite curse word of Fabien’s father. A 100% Malbec cuvée, from 25-year-old vines grown on Kimmeridgian-period clay-limestone slopes. Careful green pruning is practiced, as are manual harvests. Wine certified organic and biodynamic by DEMETER. The vinifications are as respectful as possible, with grapes placed in vats for 10 days. Matured on lees in vats and barrels for 10 months. Neither fined nor filtered, zero sulphur added.

Fabien Jouves represents the golden generation of Cahors. This young and dynamic vigneron settled in 2006 on the highest slopes of Cahors, where he took over his family’s estate of 20 hectares.
