85% Chardonnay and 15% various grape varieties from vines grown organically and planted on a South-facing hillside, superficial brown clay soils. Manual harvest on September the 13th and 15th. Vinification without additives: maceration of the whole bunches until the 3rd of October 2020, the alcoholic fermentation is not finished therefore there still are sugars in this cuvée, 27 months of aging in stainless steel vats. Only 160 bottles produced, bottled by gravity during December 2022. Not fined, not filtered, without added sulphites.
Didier Mouton
Didier Mouton is a vigneron in the Corrèze region of south-western France. There, since 2001, he has owned a micro-estate, and since 2006, vinifies his own wines. With a little more than 1 hectare, producing 800 bottles a year, we are talking here about an impassioned gardener.
