100% Malbec from 25-year-old vines, grown biodynamically, this cuvée is certified by Demeter. This is a plot selection at the top of the hills in Cahors appellation, at 350 meters above sea level, on Kimmeridgian limestone soils. Manual harvest and natural vinification. Total destemming, one month of maceration in vats, 6 months of aging in concrete tanks, on the lees. Bottled at the Estate without fining nor filtration, no sulfur added.
Fabien Jouves represents the golden generation of Cahors. This young and dynamic vigneron settled in 2006 on the highest slopes of Cahors, where he took over his family’s estate of 20 hectares.
