A blended cuvée of 35% Gamay from Beaujolais, 35% Grenache from Limoux (South-West of France) and 30% Merlot from Bordeaux, from organic vines harvested manually. Vinification in Bordeaux at Laurent's urban winery, a former bunker! Carbonic maceration in whole bunches for the Gamay, destemming and short maceration for the Grenache and Merlot. Gentle pressing, aged for six months in old barrels, so no new oak. Bottled at the winery without fining or filtration. 3200 bottles produced.
