A blend of 5 grape varieties—Pinot Blanc, Pinot Gris, Sylvaner, Chardonnay, and Gewurztraminer—in equal parts, from vines planted in 1963 in Husseren-les-Châteaux. Organic and biodynamic farming. A light maceration of less than three days occurs for the Pinot Blanc and Chardonnay, with the rest pressed directly. The juices are blended during fermentation, followed by vinification and aging in barrels (without new oak), on thin lees, for 11 months. Bottled at the estate without fining or filtration, with just a micro-dose of sulfur (1g/hl).

Pierre Weber took over his grandfather's vines in 2020, on the very day the lockdown was announced. Flashback: son of an oenologist and grandson of a winemaker, Pierre was never drawn to the wine world, which seemed full of complications. After studying energy and urban planning, he spent five years developing Paris' Climate Plan. He wanted to make a difference but craved something more...
