Co-fermentation of five Alsatian grape varieties from the same terroir: 40% Riesling, 30% Auxerrois, 20% Pinot Gris, 5% Muscat and 5% Sylvaner, from vines in conversion to biodynamic viticulture and planted just below the Grand Cru Kaefferkopf, on sandy-clay soils. The vines are pruned short to keep the yields low, and the grapes harvested by hand at optimal maturity. Vinification: direct pressing, fermentation with indigenous yeasts, and 8 months of maturation in old oak barrels.
