Complex and evolving nose with notes of rose, orange blossom, honey, candied white fruits, and a subtle hint of madeleine... Palate: a dry wine, both dense and tense, with a beautiful, lingering aromatic finish that keeps revealing itself.

Pinot Gris from biodynamically farmed vines planted in 1970 on granitic soils. Manual harvesting and natural vinification: direct pressing, then transfer of the juice into casks for fermentation and aging on total lees, in wooden casks that have seen several wines, for one year. Bottled at the estate on September 29, 2024, without fining nor filtration, just a micro-dose of sulphur (added during pressing).
JÉRÔME FRANÇOIS
Jérôme François settled in Ostheim in 2014. The young carpenter couldn’t resist the call of the vine and started his estate with a few plots from his grandfather and the barn of his great uncle! Late 2017, Jérôme teamed up with Yann Bury. The man grows his vines biodynamically, and works the soil not with a tractor but with two horses, Sirus and Fastochex. A flock of black Ouessant sheep...
