90% Chasselas, 5% Riesling, and 5% Gewurztraminer from century-old vines farmed biodynamically. The Chasselas comes from the Clos des Capucins, marking its final vintage, as the vines were uprooted in late 2020. Hand-harvested and naturally vinified without additives: whole clusters are gently pressed in pneumatic presses, with fermentation starting in stainless steel tanks. Bottled in October 2020 with residual sugars, it spent over three years aging on laths. Disgorged in December 2023, with no added sulfites.
