A nose of ripe pear, citrus fruits and pineapple, with subtle vegetal notes... Palate: very fresh, well-balanced and smooth drinking, with lovely acidity. A long finish with mineral notes and a touch of honey.
A bland of 70% Pinot Auxerrois and 30% Pinot Blanc, from vines farmed biodynamically and planted on sandy soils over granite bedrock. Certified organic by Ecocert and biodynamic by Demeter. The grapes were harvested by hand at maturity, followed by a respectful vinification: slow and gentle pressing to preserve the fruit, fermentation with indigenous yeasts, and maturation for 8 months in stainless steel tanks and large oak casks taht have seen several wines.
