A bland of 70% Pinot Auxerrois and 30% Pinot Blanc, from vines farmed biodynamically and planted on sandy soils over granite bedrock. Certified organic by Ecocert and biodynamic by Demeter. The grapes were harvested by hand at maturity, followed by a respectful vinification: slow and gentle pressing to preserve the fruit, fermentation with indigenous yeasts, and maturation for 8 months in stainless steel tanks and large oak casks taht have seen several wines.
