A 100% Pinot Noir cuvée, from vines grown biodynamically and planted on sandy-limestone soils over gravel and granite pebbles. Certified organic by Ecocert and biodynamic by Demeter. The Clos des Capucins is a vineyard site situated at the bottom of the slope, well protected from the wind by the surrounding hills. The grapes are harvested by hand once ripe then vinified with respect: one week of cold maceration, 10 days of fermentation with indigenous yeasts, maturation for 12 months in large casks and barrels that have seen 2 to 4 wines.
