Blend: 80% Pinot Gris, 10% Pinot Blanc and 10% Auxerrois, from vines in the process of being converted to biodynamics, and planted on a plot that was acquired in 2019, showing marl-limestone soils, facing South-East. Manual harvest at maturity. Vinification: direct pressing, co-fermentation of the three grape varieties using indigenous yeasts, aging in 228-litre barrels on total lees for just over a year. These are mostly barrels that have seen three or four wines, completed with less than 20% of new oak.
