Complex nose, first fruity on apple and candied pear, then lemon peel, honey, very beautiful minerality. Palate: beeswax, herbaceous and tangy. Big crush ahead for all Riesling-aficionados declined in its most natural and somehow funky expression.

100% Riesling from vines grown biodynamically and planted on the Steiner Grand Cru. Vinification: direct pressing, Jean puts three buckets of whole bunches and coarsely de-stemmed grapes in a net which will infuse in the 500 liters of juice that ferment in a cask for a year and a half. Very long alcoholic fermentation, bottled just after the end of fermentation, that's a dry juice. Not fined, not filtered, without added sulfites.

Jean-François Ginglinger, a 100% natural vigneron based in Pfaffenheim, south of Colmar, took over his father’s estate in 1999.
