A 100% Sylvaner cuvée made from 15-years-old vines farmed biodynamically and planted on sandy soils over granite bedrock. Certified organic by Ecocert and biodynamic by Demeter. The grapes were picked by hand at maturity, followed by a respectful vinification: a slow and gentle pressing to preserve the fruit, fermentation with indigenous yeasts and maturation for 8 months on fine lees in large casks, without stirring.
