100% Chardonnay from organically farmed vines in the south of Beaujolais, harvested by hand. Naturally vinified in Rotalier at Maylis: whole-cluster maceration for 30 days with no punch-downs or pump-overs, then pressed and lightly settled before aging in 500L barrels for two years, topped up every two weeks. Bottled in July 2022, unfined, unfiltered, no added sulfur. Aged in bottle for two years.
