A blended cuvée of of 90% Gamay Noir à jus blanc and 10% Aligoté, from old vines farmed organically and planted in granitic soils. Harvesting is done by hand to respect the grapes and preserve the indigenous yeasts. Natural vinification with direct press for both grapes, resulting in a clear juice—90% Gamay, making it a Blanc de Noirs! Aged for 10 months, split equally between amphorae and 600L barrels, without new oak. Bottled at the estate in June 2024 without fining, filtration, or any added sulfur.
