Paul Estève
Paul Estève and Chrystelle Vareille founded Domaine des Miquettes in 2003 in Cheminas, a little village nestled on the plateau above Tournon and Sécheras, in the southern part of the Saint Joseph appellation. They took over Paul’s family farm, and are today owners of 3 hectares in Saint Joseph and 1.3 hectares of Syrah and Viognier classified as Vin de Pays. The vineyard in Saint Joseph is situated on steep hills, reaching an altitude of around 350 metres. The plots are worked all year long by horse, winch and pick depending on the parcel. Paul fortifies his vines with his own decoctions of plants and clay. The entire harvest is performed by hand, and the wines are vinified as naturally as possible. The fermentations are carried out with the grapes’ indigenous yeasts, without temperature adjustments; the wines are neither fined nor filtered. Paul is very sensitive to the wines of the country of Georgia, and he has taken to fermenting and ageing certain cuvées in amphorae – cuvées that are often victims of their success. In other words, if you’re quick enough to get some of these wines in your cellar, feel fortunate!
