Fred bought Domaine de l'Écu in 2010, with its perfect soils cultivated organically since 1972, then certified biodynamic by DEMETER in 1998. He’s been collaborating with Guy Bossard since 2014, the master of Muscadet. The pairing is simply miraculous. Fred, a novice at winegrowing but an unparalleled taster, knows exactly what he wants and what he intends to do for wine in the Muscadet. Folle Blanche and Melon de Bourgogne have been transformed, along with the estate’s classic cuvées still being made, into very great natural wines. The red grape parcels offer splendid cuvées of Cabernet Franc, Cabernet Sauvignon, and Pinot Noir. After all, when your parcels are 30 to 40 years old and have never seen a single drop of pesticides, it would be a shame to deprive yourself! The estate does a lot vinifications using amphorae. Tons of wisdom, knowledge, energy and modernity in the juices. Fred has taken his estate in a new direction, and Muscadet along with it...
Surprising nose, original, and very, very fruity: black cherry, blackberry, and strawberry... simply splendid! Palate: still very tight at this stage, but with great potential; this is a pure, chiselled Cabernet Franc. It's going to be very good, with just a little patience...
A powerful nose, with mineral and citrus notes, white flowers, honeysuckle, and almond. Palate: characteristic of an amphora wine, that is to say supple, creamy, complex, fruity. The juice is nonetheless taut and powerful, with a saline finish.
