Not a rosé, not quite a red... It's a 'blouge'! A blend of white (blanc) and red (rouge): Aligoté from Saint Bris and Gamay from Beaujolais. The vines are farmed organically and harvested by hand. Separate vinification for each variety: direct and long pressing for the Aligoté, whole-cluster maceration for three weeks for the Gamay in a conical wooden vat, with gentle pumpovers and punchdowns. The juices are blended during fermentation, followed by 18 months of aging in Burgundy barrels, without new oak. Not fined or filtered, micro-dose of sulfur.
