100% Chardonnay from vines planted by massal selection, grown on loamy clay-limestone soils, over a slab of pearly stone called Aragonite, leaving almost no soil between 5 and 50 cm. From a parcel planted in 1936, 1955 and 1970. Yield is around 30 hl/ha. Grapes are harvested by hand, with sorting in the vineyard and on tables when necessary. Vinification: direct and slow pressing. Fermentation in barrels, matured in old barrels on the lees for 12 months, and then 12 months in enameled vats. Zero sulphur added.
