100% Chardonnay from vines planted by massal selection, grown on loamy clay-limestone soils, over a slab of pearly stone called Aragonite, leaving almost no soil between 5 and 50 cm. From a parcel planted in 1936, 1955 and 1970. Yield is around 30 hl/ha. Grapes are harvested by hand, with sorting in the vineyard and on tables when necessary. Vinification: slow pressing of 6 hours. Fermentation in 600-litre demi-muid barrels, matured in casks on lees for 12 months, and then 3 months in vats. Zero sulphur added.

Julien Guillot is a face of youth and renewal for the Mâconnais. He started working in 1998 on his family’s estate, spearheading its conversion to biodynamics, and finally taking over the reigns in 2001.
