Ariane - 2021 - Athénaïs De Béru

Château De Béru

Notes of vineyard peach, redcurrant, and dried flowers. The short maceration lends a delicate tannic texture, placing this wine at the intersection of orange and rosé. The palate is supple, with a persistent finish. Ariane is the daughter of Athénaïs and Antoine, born in June 2021.

A single-parcel cuvée with Chardonnay, Pinot Noir, and Aligoté vines cultivated biodynamically in the Côte d'Auxerre. In the winery, the goal is to recreate this parcel in the press: roughly equal parts of all three grape varieties are placed in the press as whole clusters for overnight skin-contact maceration within the berries. The wine then undergoes 18 months of aging in Burgundy barrels that have seen several wines. Bottled at Château de Béru without fining or filtration, with just a micro-dose of sulfur added.
