Auxey Duresses Le Plain de Lugny - 2022 - Pauline Genot

Pinot Noir from organic vines planted in 1972 in Le Plain de Lugny lieu-dit, covering 33 ares of marl and limestone soils. Harvested by hand, sorting in the vineyard and on a vibrating table in the cellar. Vinification: total destemming, a few days of cold maceration, pumping over but very little punching down. Pressing, 12 months of barrel ageing with 20% new oak. After a year, the barrels are racked for blending in vats, before bottling. All work is done by gravity.
