This is lively, floral juice, complex and dense, with lovely tension, and notes of citrus fruits. A full palate, elevated by its freshness and minerality.
100% Chardonnay, from 35-year-old vines, 80% from the commune of Volnay and the rest from Corpeau. The cuvée Bigotes takes its name from the first vines Fred acquired, situated in Corpeau behind the church there. The vines are grown organically and harvested by hand. Natural vinification, without any inputs: direct pressing of the whole clusters, fermentation and maturation egg-shaped concrete vats. Unfined, unfiltered, zero sulphur added.
Frédéric Cossard and his partner Laure founded their estate in 2006, while also beginning to buy grapes from multiple historic appellations: Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Chambolle-Musigny, Vosne-Romanée, and even the Jura.
