100% Aligoté, an often-underappreciated grape varietal, which in the expert hands of the De Moors, becomes exceptional. From a 1.3-ha parcel in the commune of Chitry-le-Fort, grown on brown clay and white marl soils. The estate is certified organic and biodynamic. Hand-picked, late harvested grapes, long fermentation in barrels on fine lees without bâtonnage. Matured for one year, half in new oak vats and half in 7-8-year-old barrels. Bottled at the estate without fining or filtration, just a microdose of sulphur.
