100% Aligoté from vines planted in the commune of Saint-Bris, at an altitude between 210 and 250 meters. East and South-West facing. The soils are clay-limestone and date back from the Kimmeridgian. Manual harvest and natural vinification. Long and gentle pressing of the whole bunches in a pneumatic press, light static cold settling. Fermentation and aging for 18 months in vats and in Burgundy barrels that have seen several wines. Not fined, not filtered, just a micro-dose of sulphur.
