100% Aligoté from organically farmed vines planted in Saint-Bris, in Yonne department, on a plot situated between 210 and 250 meters in altitude, facing East, South, and Southwest, with clay-limestone soil. Natural vinification: manual destemming to preserve the integrity of the berries, nearly three weeks of maceration in stainless steel tanks, pressing of the marc in a vertical press, blending of free-run and press juices. Aged for 12 months in barrels that have seen several wines. Not fined, not filtered, with no added sulfur.
