A Chardonnay from a single parcel of vines planted in the 1980s – a vineyard site already identified by monks in the 12th century. The clay-limestone soil follows a fracture in the bedrock, and the south/southwest facing parcels are situated at an altitude of 300 metres. Vines grown biodynamically, and grapes are harvested with small 12 kg crates. Vinification: slow pressing, moved to casks for 18 months, followed by one year in wooden vats, and one additional year in bottle. Unfined, unfiltered, receives a very light dose of sulphites at bottling.
