Chardonnay from a single parcel of vines planted in the 1980s on soils of limestone scree across a dome towards West, gentle slope. In terms of viticulture, the estate is farmed organically and biodynamically (certified by Demeter), and grapes are harvested by hand with small 12 kg crates. Vinification: slow pressing, and a twofold maturation: 10% in barrels that have seen several wines and 90% in vats, for 18 months, followed by blending and 6 more months in vats. Unfined, unfiltered, bottled with just a pinch of sulphur.
