100% Chardonnay from Alice and Olivier's négociant business, planted on two parcels, one of which is farmed organically by one of their friend in the Béru area, while the other is located in the Courgis area, owned by a retired vigneron and not certified organic, but farmed and harvested by Olivier. The grapes are harvested by hand when very ripe, followed by long fermentation in barrels on fine lees, without stirring, then one year of aging in 10-to-12-year-old barrels, with just a pinch of sulphur at bottling.
