100% Chardonnay from five parcels of vines planted in the 1980s on clay-limestone soils from the Kimmeridgian era (with numerous fossils and shells) near the bedrock, at an altitude of 300 metres on the Béru hill. The estate is farmed organically and biodynamically, certified by Demeter. The grapes are harvested by hand, with small 12 kg crates. Vinification: slow pressing, gentle settling, maturation of 18 months in vats and casks that have seen several wines, on fines lees. Unfined, unfiltered, just a microdose of sulphur at bottling.
