100% Pinot Noir from vines farmed organically and planted on a very beautiful parcel with a limestone bedrock. Vinification of whole grape bunches, with 3 weeks of maceration, gentle pressing to preserve the fruit, and one year of aging in qvevris, those large clay amphorae buried in the ground, following the Georgian tradition. Unfined, unfiltered, zero added sulphur!
