Ladies and Gentlemen... The Pinots Blacks: Thomas Pico in Chablis, Damien Délecheneau in Touraine, Bruno Verret in Saint-Bris-le-Vineux, and Thomas Espana, restaurateur from Chablis. Thomas and Damien had long dreamed of vinifying Pinot Noir, and that dream came true with the purchase of just under a hectare of vines in the Irancy appellation. The philosophy that unites these four friends is naturally reflected in this cuvée: biodynamic farming, hand harvesting, gentle maceration, and vinification without additives, with just a micro-dose of sulfur.
Damien Délécheneau
Damien and Coralie Délécheneau met as classmates in Bordeaux, while both studying for their oenology diplomas, and haven’t left each other since. After each separately gaining experience (in the Beaujolais trade body, and in California for Madame, and training in Irancy, in Chablis at Domaine Laroche, in Saint Estèphe, and in Napa Valley for Monsieur) they finally returned to Amboise in 2002...
