100% Aligoté from biodynamic vineyards planted in Saint-Aubin, Burgundy. Hand harvested, the whole bunches are sorted manually at the winery. Vinification: during 6 months, the grapes are placed in terracotta jars made in Tuscany. The jars are closed, Pierre does not touch his grapes during the maceration. Soft pressing in a small manual press, blending of the free-run juice with only 1% of the press juice. Bottled by gravity in Spring 2023, without fining or filtration, no added sulfite.
