A Pinot Noir from the vineyard parcel “Les Crays”, a micro parcel of just 40 ares of chalky soils, planted with 40-year old vines grown biodynamically, the whole este is certified since 2001. Grapes are harvested by hand, with sorting in the vineyard and on tables when necessary. Vinification: semi-carbonic maceration of the whole bunches, maceration for 8 days in open vats, transferred to barrels and matured for 12 months, with no filtration, and no added sulphur (like all the estate’s reds).

Julien Guillot is a face of youth and renewal for the Mâconnais. He started working in 1998 on his family’s estate, spearheading its conversion to biodynamics, and finally taking over the reigns in 2001.
