Chardonnay from a parcel contiguous to Combe d'Eve, yet the geological difference makes for two very distinct wines. This vineyard site is located above the AOC Beaune 1er cru “Les Bressandes”, at the bottom of a little valley where it’s very hot in the summer. The vines are 30 years old, grown biodynamically, facing the rising sun, and planted on soils made up of very white limestone lava. Vinification: direct pressing, settling, 15 months of aging on lees. Bottled at the estate with a low dose of sulfur.

Emmanuel Giboulot, you’ve probably heard of him by now. He’s the winemaker who became famous for refusing to treat his vines with pesticides, and as a result was convicted and fined in court. The estate was inherited from his father who had already converted to organic viticulture in the 1970s. Besides his 10 hectares of vines, the vigneron continues to farm 80 hectares of grain.
