100% Pinot Noir from vines planted on a 0.5-hectare parcel of clayey, stony soil facing southwest. Harvesting was done by hand with yields of 18 hl/ha. Vinification: whole-cluster, three days of pre-fermentary cold maceration, followed by a long extraction with some punching down. Aged for one year in barrels and 8 months in vats. Bottled at the estate on the 15th of March 2023, without fining or filtration, with sensible use of sulfites (37 mg/l of total SO2).
Seiichi Saito
Seiichi Saito is the winemaker at the head of Domaine Petit-Roy in Chorey-lès-Beaune. Born in China, he moved to Japan with his parents at the age of 11 to join his Japanese grandmother. A wine enthusiast who has always wanted to work in nature, he hesitated between Bordeaux and Burgundy when he arrived in France in 2005, but his passion for Pinot Noir won out.
