2/3 Pinot Noir and 1/3 Pinot Meunier from vines in the process of being converted to organic farming, planted on clay-limestone soils, the plots are facing North. Harvested by hand at high ripeness, maceration of the whole bunches before and after saignée for 7 days. This cuvée is the result of pressing the Rosé de Saignée grapes. Natural vinification in barrels that have seen 5 to 10 wines. Aged for almost two years in these same barrels, bottled on the 31st of August 2023, without fining, filtration or any added sulfites.

Fabian Daviaux, child of 1987, is at the head of Champagnes Chavost, a unique cooperative that produces organic and natural champagnes and brings together a dozen families from the village of Chavot-Courcourt.
