100% Chardonnay from 45-year-old vines planted on chalky soils on the village of Cuis, parcels classified as Premier Cru. Manual harvest at optimal maturity, very gentle pressing, alcoholic fermentation in barrels with indigenous yeasts, aging on total lees for 8 months in barrels, bottled in May 2020, aging on laths, disgorging in Summer 2021. This is an extra-brut champagne. This cuvée is made of 70% of the wine from the 2019 harvest, and 30% of the perpetual reserve wine started in 1986. Sold in its original wooden case.
Adrien Dhondt
Adrien Dhondt, in his thirties, is at the head of Domaine Dhondt-Grellet founded by his parents in 1986, Eric Dhondt and Edith Grellet, in Flavigny in the heart of the Côte des Blancs. The Estate has six hectares, notably in Premier Cru and Grand Cru, ideally located between Cramant, Cuis, Sézanne, and Avenay-Val-d'Or.
