Ritual Pinot Noir - 2016 - Sofia Araya

100% Pinot Noir from organically farmed vines planted less than 30 km from the Pacific Ocean, on the Coastal Range. Cover-cropped vineyards, well-drained decomposed granite soils enriched by a roaming flock of sheep, cold climate. Hand-harvested at dawn, sorted in the vineyard and cellar. Whole-cluster fermentation, 5-day cold soak in open stainless steel vats, native yeasts, fermentation completed in French oak barrels (20% new), aged 11 months.
