100% Pinot Noir from Casablanca Valley, sourced from sustainably farmed vines. Escultura vineyard lies just 32 km from the Pacific, benefiting from a cold climate ideal for the grape. Poor soils of clay, sand, and granite. Hand-harvested, sorted in the vineyard and cellar, destemmed, crushed, 5-day cold soak, native yeast fermentation, 20 days of maceration, 11 months of aging in French oak barrels (15% new).
