100% Chasselas, this is a single-plot cuvée from vines grown biodynamically (certified) and planted at an altitude of 650 meters, on a gentle slope, soils of loess on granite. Manual harvest with small crates. Vinification: pressing of whole grape bunches, natural settling and zero oenological additives, with indigenous yeasts and 6 months of maturation in vats. Light filtration before bottling at the estate, and just a micro dose of sulphur.
