A very lovely sparkling wine, with notes of crushed strawberry, citrus fruits, and lemon thyme... The plate is fresh and enveloping, with an almost creamy texture, balanced by gorgeous effervescence. Wow! A beautiful discovery.
100% Pinot Noir from vines farmed biodynamically and planted in the village of Lenswood, 30 km East of Adelaide. The grapes are harvested by hand, with sorting in the vineyard, followed by direct pressing of whole bunches, fermentation with indigenous yeasts and maturation in concrete eggs. Bottled with a little residual sugar remaining to create the effervescence. Neither filtered nor fined, and no added sulphites. An undisgorged juice, so leave the bottle upright in the fridge for 24 hours before tasting, so that the lees settle.
