Pinot Noir, perhaps the only red wine produced on the exceptional Graacher Himmelreich terroir (rated three-stars – reserved for sites and wines of tremendous quality), whose slate and clay soils are sustainably farmed. Vineyard work is meticulous, with harvesting done by hand and rigorous sorting for healthy, fully ripe grapes. Destemmed grapes are fermented slowly with indigenous yeasts, with gentle pressing in a vertical press, and 24 months of maturation on fine lees in French oak barrels. Bottled at the estate without fining or filtration.
