100% Pinot Noir, from vines cultivated using sustainable methods and planted on decomposed clay soils. The grapes are harvested by hand, with controlled yields: and meticulous work in the vineyard and sorting to select only healthy, perfectly ripe berries. Vinification: after de-stemming, the grapes macerate three weeks, followed by a slow fermentation with indigenous yeasts, and 14 months of maturation on fine lees, in tuns, with regular stirring. Bottled on the estate without fining or filtration.
