100% Chasselas from 20-year-old vines planted on a 0.3-ha plot of clay-limestone soil. Harvested by hand in early October when overripe, and at minuscule yields: 5hl/ha! The grapes are then left to dry in the open air until they’ve lost half their weight. Delicate de-stemming, gentle crushing, 7 days of maceration on the skins, minimum two years of maturation in barrels that have seen several wines. Neither fined nor filtered, and no added sulphites. Yet another exquisite nectar from Stefano: 125 mg per litre of residual sugar. A 37.5-cl bottle.
Stefano Bellotti
Stefano Bellotti was a living legend, Italy’s Pierre Overnoy if you will, settled since 1977 in the hills of Novi Ligure between Alexandrie and Gênes (Piedmont). Stefano was 18 years old when he inherited this family farm which comprised just one hectare of vines. And so, it was from almost nothing that Italy’s father of biodynamic viticulture got his start.
