100% Pinot Gris, cultivated on a sandy soil. The grapes are de-stemmed, undergo a long, 8-month maceration, followed by fermentation and maturation in closed clay amphorae. In time, the wine will be separated from the skins by racking, then be matured an additional two months in acacia wood barrels. Neither fined nor filtered, very light dose of sulphites at bottling.
