Chardonnay grapes, "Cha", while “Chat” in French means "cat", for similarity “the Chat” is born. 100% Chardonnay from vines grown organically and harvested manually at the beginning of September. Vinification: destemming, direct pressing, the first press juice ferments for three weeks in stainless steel tanks, then is aged for 12 months in French oak barrels of 500 liters that have seen several wines. 6 months of maturation in the bottle in the Estate’s cellar. Bottled without fining, filtration or addition of sulfites.

Gian Marco Antonuzi
Gian Marco Antonuzi and Clémentine Bouvéron live in Gradoli, 150 km north of Rome. Clémentine studied oenology and Gian trained under such renowned vignerons as Barral and Pacalet . The young couple settled here in 2004 and started their estate from scratch, the land uncultivated but for a grove of olive trees abandoned for the last 20 years – good news when one doesn't want to inherit...
