Nose carried by notes of peach, iodine, candied lemon, very aromatic... Palate: powerful, finely tannic, beautiful volume and persistence. A digestible and quite surprising orange wine, with beautiful and light bitterness.

A blend of 50% Grillo and 50% Inzolia, two indigenous grape varieties of Sicily, from 15-year-old vines grown organically, planted in the South-East of the island, at around 230 meters above sea level, on limestone soils with of silica and clay. Vinification: manual harvest in small crates, destemming, maceration for 10 days, fermentation with indigenous yeasts, aging for about 9 months in cement vats. Neither fined nor filtered, just a micro-dose of sulfur during bottling at the Estate.
Giusto Occhipinti
Giusto Occhipinti is Arianna ’s uncle, but above all he is her mentor. He founded this vineyard in 1980 with two friends. From the first letters of their three names (Cilia, Occhipinti, Strano) came the name of Domaine COS.
