A 100% Barbera cuvée made from vines around 20 years old, farmed organically and planted on a 1-ha parcel of marly-limestone soil. Harvested by hand, of course, followed by 22 days of maceration in 50-hl cement vats, slow and gentle pressing to preserve the fruit, 18 months of aging in cement vats. Bottled without filtration or fining, and just a micro-dose of sulphur.
